I’ve really missed holiday baking and even though there’s a while before I can bake for Christmas, I’m definitely ready for Thanksgiving baking! SO, here’s an incredibly easy pumpkin pie cookie recipe that literally anyone can toss together in just a few minutes!
What You Need:
- 1 sugar cookie mix (which will call for water, butter and maybe an egg!)
- 1/2 c Canned Pumpkin
- White icing of choice
- 1 tsp (more if you’re like me) Pumpkin pie spice
- 1/4 c Sugar
- 4 oz cream cheese
Now, making it is super easy! Since we’re using a sugar cookie mix to keep it easy, you just need to mix together all it calls for on the box you use, usually butter and maybe an egg. When the cookie dough is mixed up, push it into the muffin tin. Push it up on the sides to there’s a big dip in the center!
For the filling, just mix in the cream cheese, sugar, pumpkin, and pumpkin pie spice until blended and use a spoon to place it in the center of the cookies!
Bake on 375 until the cookies are getting browned and the filling looks settled. When they’re cooled off, add a dab of white icing to the center for mini pumpkin pies!
