I couldn’t wait to share this super easy and quick recipe. Considering I love to cook, this was something I was able to whip up super quick with the stuff I had in the house on a random Tuesday!
What you’ll need:
- Baking powder (I just mixed baking soda and cornstarch since I didn’t have any). If you have baking powder, use 1 1/4 tsp. I did closer to 1/2 tsp since I used baking soda.
- 2 tbsp butter (melted).
- 1 cup quick oats
- pinch of salt
- 1 tsp vanilla extract
- 1 egg
- 3/4 cup whole wheat flour
- 2 tsp cinnamon
- 1/2 cup honey
- 1/2 to 3/4 cup chocolate chips
Pre-heat oven to 325.
Mix the dry ingredients separately from the wet ones. You want the flour, oats, baking powder, cinnamon and salt mixed together.
Melt your butter and combine with the egg, vanilla, and the honey and mix.
Combine the two mixtures into one bowl and blend them together. Fold in most of the chocolate chips. Once they are one cohesive mixture, throw it in the fridge for a half hour. Following, roll it into balls the size of the cookies you want and put them in the oven for no more than 15 minutes.
Once they come out of the oven, press the extra chocolate chips into them and let them cool. Now, you have a decently healthy sweet treat to share!
